It’s called “dance” because the small bubbles bustle about the drink. You can use bitter sloe gin instead, if you like.

INGREDIENTS

  • 150ml damson gin
  • Juice of ½ lemon
  • 1 x bottle of cold, dry, sparkling wine, preferably an English brut

METHOD

  1. Simply divide the damson gin between six champagne flutes, add a scant teaspoon of lemon juice to each and top up with the sparkling wine.
